- Cream spinach
A balanced side that is sure to surprise and delight your guests will be creamy spinach with mushrooms. It is easy to make a side that will take you less than 10 minutes to prepare. You can heat oil in a pan, stir in some leeks and mushrooms and cook them until they are transparent. Add your spinach into the pan and cook until soft before adding some salt and pepper for some flavour. Then complete the dish by adding cheese and cream and stir in the heat for about five minutes.
- A fruit and veg bake
An unusual yet satisfying side dish is the pumpkin, sweet potato and pear bake. This dish takes just over an hour to complete but it takes 10 minutes to prepare. All you need to do is preheat the oven to 180 °C, put the butter on a baking tray followed by the pears, sweet potatoes and pumpkin. Once the vegetables are in the tray, dribble some olive oil over them and add cumin seeds then bake it for 30 minutes. You can then mix honey, sugar and cinnamon over the bake vegetables and then bake for another 30 minutes.
- Coleslaw
Traditional coleslaw is a fantastic dish that will add a refreshing taste to your spit roast pig meal. An easy recipe to follow is to purchase a cabbage and remove any blemished leaves then chop them into strips. This will be followed by peeling and thinly slicing carrots then mix the cabbage and carrots along with lemon juice, salt and cinnamon into a large bowl to mix. After mixing, leave it to stand for about 20 minutes then use a colander to drain the mixture. Add some mayonnaise, mix it some more and there you have it.
